Description/ Specification of Dehydrated Food products
Primary purpose of dehydrating vegetables , is to store excess food items organically , thereby adding commercial value to them. Dehydration and processing are done to prepare food ingredients such as Onion powder, Garlic powder, Onion flakes, Garlic flakes, Dehydrated coconut, Dried tomato powder etc. Other vegetables that are processed are mushrooms, Potatoes, Bell paper, Cucumber to name a few. This are offered in the form of flakes , powders, slices, and granules. These are used in food processing industries to make soups, pickles, sauces, fast foods etc. Dehydration is an elaborate industrial process which involves cutting vegetables to various desired sizes, washing, Blanching, drying , storing etc. In the drying process, the prepared vegetables are arranged in a single layer on drying trays. In a dehydrator, they are dried at a temperature of 125°F to 135°F (52°C to 57°C), which is ideal for preserving nutrients and preventing case hardening, where the outside becomes hard while the inside remains moist. The drying time can vary from a few hours to a couple of days, depending on the type and size of the vegetables. Proper ventilation is crucial to remove moisture effectively. Drying is followed by Conditioning and Storing. Once the vegetables are fully dehydrated, they should be conditioned by placing them in a jar or container and shaking it daily for about a week. This allows any remaining moisture to distribute evenly, reducing the risk of spoilage. Dehydrated vegetables should be stored in airtight containers in a cool, dark place. Vacuum sealing or using oxygen absorbers can further extend their shelf life. The process of dehydration is an ecofriendly one, as it doesn’t consume much energy. Also, most of the nutritional values of the vegetables such as vitamins, minerals, and fibre are retained. Dehydrated vegetables can be rehydrated easily by soaking them in warm water.
